5 Easy and Fabulous Holiday Meals from the Barefoot Contessa.

You all know how I love to cook, but even when we are not in the throws of the holiday season, making dinner can be a stressful endeavor. 

So now that we feel the weight of the holidays bearing down on us like a 12 pound baby after 16 hours of labor, I want to share with you five of my favorite holiday dinners that are easy and best of all, so delicious you friends and family will be raving about you for days to come!

I am a HUGE fan of  Ina Garten.  I have learned some of my best cooking techniques from watching her show every Saturday morning on the Food Network for years.  I own everyone of her cookbooks and they have been used to death.  Lots of sticky food on pages but that is a sign of a good cookbook right? 

Ina makes beautiful meals that are so easy to prepare and the best part is she has all of these little tips and tricks to make food ahead of time so you can actually enjoy yourself and not be a slave to the kitchen.

I believe that being able to have time with your guests, your kids and enjoy your glass of wine is about the best a girl can hope for during the holidays. Also a little bonus, with all of these recipes, you really can make them ahead and save yourself from being a slave to the dishwasher after the party is over.

Herb Roasted Turkey Breast   - The easiest way to do turkey - Serve with your favorite sides all made ahead of time and you will be a goddess! Wine paring:  An Oregon Pinot Noir from Elk Cove would be my choice.

Chicken Stew with Biscuits .  My children's favorite meal for their birthday and usually Christmas Eve. Add a salad and dessert and you are done my friends. My kids even have their own personal shape/cookie cutter for the herb biscuits. I know they are spoiled. Wine paring: Grab a nice Cali Chardonnay for this one, buttery and delish!

Baked Virginia Ham  . I have made this ham so many times but it never disappoints. Serve with cheesy hash brown potatoes, and a layered pea salad and you have a winner, winner piggy dinner!  Use the left over ham to make mac and cheese with ham later in the week.  Wine paring: A Malbec is perfect for this meal.

Filet of Beef with Gorgonzola Sauce.    If you are looking for decadent this is it! Serve alongside garlic mashed potatoes, lemony green beans, plenty of bread to soak up the sauce. Wine paring: A nice Washington Cabernet Sauvignon and you are in like Flynn!
